Orange Crush


Juicy tangerines waiting for their turn in the juicer.

                  

It’s tangerine season. And while I love the idea of tangerines, I really, really hate all the seeds. This makes tangerines perfect candidates for juicing and turning into granita, savory stir-fries, cake, and spritzers. Here is a simple beef stir-fry made with sprightly tangerine juice and my favorite granita.

Tangerine Beef Stir-Fry

3/4 cup fresh tangerine juice

3 tablespoons rice vinegar

3 tablespoons soy sauce

2 tablespoons brown sugar

1 pound round steak cut into 2-inch strips

2 tablespoons cornstarch

salt and pepper

2 tablespoons olive oil

2 cloves garlic, chopped

1 head crisp cooked broccoli

1. Combine juice, vinegar, soy sauce and sugar. Toss beef with cornstarch, salt and pepper.

2.In large skillet heat oil, add beef and garlic, cook until browned. Add tangerine juice mixture and broccoli. Cook over high heat until sauce thickens, 4 minutes.

Tangerine Granita

6 cups fresh tangerine juice

3/4 cup sugar

3/4 cup water

2 tablespoons lemon juice

1. Heat sugar and water until sugar dissolves. Combine with tangerine and lemon juice. Stir well. Pour into a shallow container, and freeze until hard. Scrape with a fork.
